Remove air tube, gasket and cover from hopper (gravity units only) and take to
sink for cleaning. |

Switch the machine on WASH for 5 minutes. |

Drain all product into a sanitized rerun container with a lid, if local health
codes permit. Switch OFF. Place re-run into refrigerator. DO NOT FREEZE.

Add cool rinse water into hopper. Brush clean hopper and inlet hole.

Switch to WASH for 2 minutes. Drain rinse water and switch to OFF. Repeat this
rinsing process until water is clear.

Prepare sanitizer according to instructions. (TAYLOR powder sanitizer is
prepared using 1 heaped teaspoon to 2 litres of warm water - not steaming.)

Pour sanitizing solution into hopper. Brush clean hopper and inlet hole. |

Switch to WASH to agitate for minimum of 5 minutes. Drain all solution. Switch
to OFF. |

Remove freezer door and all freezing cylinder parts. |
| 10. |
Disassemble freezer door unit and remove all O-rings with special tool. |
| 11. |
Brush clean all disassembled parts in freshly prepared sanitizing solution and
allow to air-dry. |

Brush clean inside of barrel with sanitizing solution, then wipe inside of
hopper and barrel with a disposable towel soaked in sanitizer. |

Leave to air dry. |
