Economy. Powder based soft serve is usually a fair amount cheaper per litre.

Taste. UHT liquid based soft serve contains a large amount of emulsifiers
compared to powder based soft serve, which usually has no emulsifiers in it.
Emulsifiers tend to leave a 'coating' in the mouth, giving you the 'urge' to
rinse your mouth with water after having one. Of course, a superior taste also
depends on the rest of the recipe.

Shelf Life. Powder mixes: 2 years. UHT Liquid mixes: 6 - 9 months. Fresh mix: 5
- 7 days. Frozen mix: unknown.

Storage Space. Powder based soft serve fees up more than 2 thirds of your
storage space. (Or takes up less of a third of the storage space of liquid soft
serve.)

Transport Cost. Transporting only a quarter of the final weight of liquid,
makes soft serve much cheaper to transport.

No refrigerated transport required. Another transport cost saving.

Storage at ambient temperatures. This frees up lots of refrigerator or freezer
space compared to fresh or frozen mix.

Much wider range to choose from. Because of the relative 'ease' of a dry
blending process, compared to aseptic liquid manufacturing at high temperatures
of liquids, it is much easier to offer a large product range with powder bases. |
