What is the difference between Soft Serve base and Gelato base?
Gelato base has much more solids and usually much more fat (10% or more). The mixing instructions is very different and Soft Serve Mix has a much higher water content than Gelato or scoop ice cream. Freezing down Soft Serve in a freezer as minus 18 degrees Celsius results in a rock-hard product which is completely unscoopable and with lots of ice crystals in it.
